Fish
1/2 cup corn flake crumbs
1/4 cup Parmesan cheese
1 tablespoon minced fresh parsley
2 teaspoons vegetable oil
1 egg beaten
2 tablespoons water
3/4 lb. fish fillets ( thawed if frozen)
Lemon slices
In food processor, process crumbs, Parmesan, parsley and oil until well mixed. ( Alternatively, mix well by hand.) Transfer to flat plate. In shallow dish, mix egg with water.
Dip fillets into egg mixture, then into crumb mixture to lightly coat all over. Place in shallow baking dish. Bake in 450 F oven for 10 min. per inch thickness of fish. Garnish with lemon slices. Makes about two servings.
